Happy Halloween and Pumpkin Smoothie

In the meantime, enjoy this Pumpkin Smoothie recipe — in keeping with the autumnal spirit.

I often freeze extra pumpkin puree in ice cube trays.  When they are frozen, I then store the cubes in a ziploc bag.  Each cube is equal to about two tablespoons of puree.

Pumpkin Smoothie

2-3 ice cubes

1/4 frozen banana

2 tablespoons pumpkin puree

3/4 cup almond milk

1 teaspoon cinnamon

1/4 teaspoon pumpkin spice

dash of vanilla extract

pinch of xanthan and guar gum if you want it extra creamy (optional)

  1.  Place ingredients in a blender and process until smooth.

Makes one serving
